Japanese sushi rice, known as "shari" or "sumeshi," is the cornerstone of authentic sushi dishes. Its preparation is a meticulous process that requires precision and care to achieve the perfect balance of texture and flavor, essential for an authentic sushi experience.

The process begins with selecting the right type of rice. Short-grain Japanese rice, often labeled as sushi rice, is preferred due to its sticky texture when cooked. This stickiness allows the rice to hold together, making it easier to form sushi rolls or nigiri.

Before cooking, the rice is thoroughly rinsed under cold water until the water runs clear. This step removes excess starch, preventing the rice from becoming overly sticky or mushy. After rinsing, the rice is soaked in water for about 30 minutes to 1 hour, allowing the grains to absorb water evenly, which ensures uniform cooking.
